A first-floor room in a French-built house more than 100 years old, a balcony looking straight onto Hoàn Kiếm lake, and six glasses poured not to be scored but to be talked through. If your picture of French wine stops at Bordeaux, Burgundy and Champagne, this late afternoon on the eastern edge of the Old Quarter opens the part that is missing.

The guest is Laurent Séverac, a Frenchman who has spent more than thirty years moving between forests, growing regions and local communities, sourcing and developing essential oils, aromatics and natural plant products. That long interest in how nature, scent and memory connect is what led him to natural wine — a category built on minimal intervention and on the character of a specific place. He has selected six wines from the south of France for the evening.

The conversation follows four threads: why wine drinkers worldwide keep turning to natural wine; why small, barely known bottles can outrank famous labels; how scent, memory and taste are tied together; and what contemporary French culture looks like from this angle.

It is aimed at people who travel and eat curiously rather than at label collectors. You need no prior wine knowledge — this is a conversation, not a course with an exam at the end.

Atelier 51.Hanoi is a small cultural salon by the lake, built around art, music, scent and conversation, and normally open by appointment only. The old house caps the room at 12 guests; the organisers confirm places in the order registrations and payments arrive, and close the list as soon as it is full.
